Take half the amount of water and add matcha tea powder -you can also use a tea bowl if you like, and whisk the powder until it creates a paste.
Simmer your coconut milk in a saucepan and pour it into the cup with matcha tea paste. Preserve some of the coconut milk for frothing.
Add the remaining hot water and stir, which should mix it easily.
Add the coconut sugar and keep stirring until it dissolves. Do not leave any undissolved lumps of sugar lying at the bottom. You can froth to get your desired texture if you have a frother.
Once you have the right texture of froth for your latte, make some more from the left-over coconut milk.
To enhance the coconut flavour, you can add a few drops of coconut extract to your latte. How many exactly depends on your own preferences.
